WHere is a home-style version of a beverage featured on our latest drinks list. It's a batch premix that's bursting with flavours of a Christmas time, making it perfect for hosting a celebration. Save the extra citrus syrup to use in brunch beverages, desserts, or to mix another batch of the drink.
The Bikini Cocktail
Yields 10 guests
To make the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
For the Cordial: Put all the ingredients into a pan, heat until it reaches a gentle boil, mixing until the sugar dissolves. Then, turn off the heat and let it to reach room temperature entirely. Transfer into a sealable bottle, seal keeping it in the refrigerator, it will last for about four weeks.
Preparing the Batch Mix: Pour the specified liquid ingredients in a sizeable container, leave to sit for one hour, then filter it preferably using muslin, to ensure it's perfectly clear.
When ready to serve: Pour 85ml of the cocktail base into a cocktail shaker packed with ice, and agitate carefully for about 60 seconds to cool it down. Filter into an frosted cocktail glass or a similar vessel, garnish with some cranberries and finish by giving it a brief mist of mandarin oil above the glass.
